There is an emphasis on using plenty of fresh organic vegetables, fruits, herbs and spices. Sattvic food is also referred to as a yogic diet because it induces clarity of the mind.
Ayurveda recognizes that we have six different tastes; sweet, salty, sour, bitter, pungent and astringent. Including all six tastes in your everyday diet contributes to feeling satisfied at the end of the meal. Cravings are often caused by not having all six tastes incorporated in the daily diet.
